		<description><![CDATA[This cake sounds de-lish!  I can&#039;t wait to try out a lemon (or lime) curd filling.  I bet it complements the coconut wonderfully!  Yum!  

I&#039;ve never tried 7 minute icing for two reasons - I&#039;m not a big fan (#1) because my Grandma always made coconut cakes with fresh whipping cream as the &quot;icing&quot; (#2).  If you&#039;ve never tried a coconut cake this way, you owe it to yourself to experiment with it!  I made one once for my co-workers at school and they can&#039;t get enough of it.  They request it for every special occasion!  : )  Even so, I think I may tackle 7 minute icing once the GA humidity calms down!  : )]]></description>

I am planning one for Camille&#039;s baptism at the end of the month and like the lime curd twist.  Myabe I will substitute lime for lemon.  Super creative.]]></description>
