This is a lightened and eggless variation of one of my favorite Caesar salads from Ina Garten. I love Ina’s Caesar salad for entertaining. It’s great with home made croutons. We had Italian night last Sunday and I wanted to make this salad but was looking for something lighter and without the raw egg. I decided to take my favorite elements from her salad (the cherry tomatoes and crispy pancetta) and pair it with a Caesar dressing I found on Cooking Light.

I will admit that the dressing definitely doesn’t live up to Ina’s but it’s very easy and much lighter. I prefer to make my own dressings and I think it adds so much to a salad. And when it’s this easy…you really don’t have an excuse not to!

Lightened Caesar Salad with Pancetta and Cherry Tomatoes
(Recipe inspired by Ina Garten, dressing source Cooking Light)

Ingredients:

FOR THE SALAD
1-2 heads romaine lettuce (depending on size)
1/4 pound pancetta, sliced to a similar thickness to bacon
1/2 cup cherry tomatoes, cut in half
Salt
Freshly ground pepper

FOR THE DRESSING
1/3  cup  plain fat-free yogurt
2  tablespoons  fresh lemon juice
1  tablespoon  olive oil
2  teaspoons  red wine vinegar
2  teaspoons  Worcestershire sauce
1  teaspoon  anchovy paste
1  teaspoon  Dijon mustard
1/2  teaspoon  freshly ground pepper
1  garlic clove, minced

Directions:

Cut pancetta into cubes. Place in a skillet over medium-high heat and cook for about 10-15 minutes, until browned and crispy. Remove from pan and drain on paper towels.

Wash lettuce well and dry in a salad spinner. Cut into 1 1/2 inch slices. Place in a large bowl.

Whisk together dressing ingredients. Pour over salad greens and toss to coat. Top with tomatoes and pancetta. Season with salt and pepper and serve.

Yield: 4 servings

Pumpkin Chocolate Chip Bars

Every year at about this time the food blogging world goes crazy for pumpkin. Seriously…it’s everywhere, all everyone can talk about. I’m not quite in the fall mindset yet because a) I just love summer so much and all the fresh fruits and vegetables that come with it and b) it’s still 85 degrees here!

The big news this year is the canned pumpkin shortage in some parts of the country. I’ll admit that when I was at the grocery last weekend I couldn’t help but look to see if they had pumpkin in stock. Don’t worry – we’re fine here in Charlotte! No pumpkin shortage for us. I picked up a can and caved and decided to bake these Pumpkin Chocolate Chip Bars that I spotted from Martha Stewart.

I’ll admit, begrudgingly, that these were awesome – especially fresh out of the oven. They have a cake like texture and are very moist. They were great served warm with ice cream on top!

And I’ll also admit…you’ll be seeing another pumpkin post from me soon!

Pumpkin Chocolate Chip Bars
(Recipe heavily adapted from Martha Stewart)

Ingredients:

2 cups all-purpose flour
1 tablespoon pumpkin-pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup sugar
1/4 cups brown sugar, packed
1 large egg
2 teaspoons vanilla extract
1 cup canned pumpkin puree (make sure you’re using 100% pumpkin and not pumpkin pie mix)
1 package (12 ounces) semisweet chocolate chips

Directions:

Preheat oven to 350 degrees. Prepare a 9 x 13 baking dish by lining it with aluminum foil, shiny side down, leaving about a 1-inch overhang on the edges. Grease foil (I like to use the wrapper from the butter).

In a bowl, mix together flour, pumpkin pie spice, baking soda and salt. Set aside. In the bowl of a stand mixer, cream butter and sugars on medium-high for about 3 minutes, until lightened in color and fluffy. Beat in egg and vanilla until just combined. Beat in pumpkin puree. Reduce speed to low and slowly mix in flour mixture until just combined. Stir in chocolate chips.

Pour batter into prepared pan and spread to ensure it’s even. Bake until the edges begin to pull away from the foil and a toothpick inserted in the middle comes out clean. About 35-40 minutes.

Let cool in pan. Once cool, lift foil from pan and cut squares.

Incredulada Enchiladas

These Incredulada Enchiladas have gained quite a fan base. Once you scroll down and read the ingredients to the recipe I guarantee you’ll think, “Are you kidding me?” They are a splurge but always a crowd pleaser.

My mother in law introduced us to Incredulada Enchiladas and they are well, incredible. I’ve shared the recipe with friends, served them at parties, taken them to expecting mothers and they’re always a hit. What’s not to love about the creamy chicken filling topped with cream and cheese? Garnish with sour cream and salsa and you’re in for a treat!

Incredulada Enchiladas
(Recipe adapted from A Third Course: More Cooking with Class from Charlotte Latin School)

Ingredients:

2 tablespoons olive oil
1 large onion, diced
1 large garlic clove, minced
2 1/2 cups cooked chicken, shredded (about 3 chicken breasts)
1 (4 ounce) can diced green chilies
1/4 cup diced jalapeno peppers
8 ounce block cream cheese, softened
Salt and pepper, to taste
12 (6 inch) flour tortillas (soft taco size)
1 cup heavy cream or half and half
2 cups shredded monterey jack cheese (or your choice, this time I used the Mexican blend)
Cooking spray
Salsa
Sour cream

Directions:

Preheat oven to 350 degrees. Prepare a 9 x 13 glass baking dish with cooking spray.

Heat olive oil in a large skillet and sautee onions until they begin to soften and become translucent. Add garlic, chilies and peppers and cook for another 2-3 minutes.

Remove from heat and stir in cream cheese and chicken. Season with salt and pepper.

Spoon mixture into tortillas, roll and place seam side down in baking dish. Pour cream over enchiladas and cover with cheese. Bake for about 30 minutes, or until cream thickens and cheese is bubbly.

Serve with salsa and sour cream.

Yield: 6-8 servings

Malted Ice Cream Sundae Pie

Brandon had been asking for and ice cream pie. I was tempted to make my standby, cookies and cream with an Oreo crust, but decided to look around to see if anything else caught my eye. I saw this Malt Shop Ice Cream Pie on myrecipes.com and thought with a few modifications it would be a winning combination. One of Brandon’s all time favorite desserts is a chocolate malt so I knew he would love this pie.

I think what sold me on it the most was the sugar cone crust. What a fun idea! The crust didn’t really hold together well but I think if I had crushed the cones a little finer I wouldn’t have had that problem. I substituted the strawberry ice cream in the Cooking Light recipe for chocolate and made my own fudge sauce to go in between layers and on top.

I’ll definitely be making this pie again but next time I’ll add more malt powder to get a stronger malt flavor. I think this would be great to serve to dinner guests topped with a cherry!

Malted Ice Cream Sundae Pie
(Recipe adapted from Cooking Light)

Ingredients:

2 tablespoons  honey
2 tablespoons  butter, melted
12 sugar cones, crushed
2 cups low-fat chocolate ice cream, softened
1/4 cup malted milk powder, divided
1/2 cup  hot fudge topping, plus more for topping
2  cups low-fat vanilla ice cream, softened
Canned whipped cream

Directions:

Combine crushed sugar cones, honey and butter in a medium bowl and stir well to combine. Press mixture into the bottom and up the sides of a 9-inch pie plate. Freeze for 30 minutes or until firm.

Place softened chocolate ice cream and 2 tablespoons of malted milk powder in a bowl. Beat with a mixer at high speed until smooth and creamy. Spread mixture evenly into crust and spread hot fudge over the ice cream. Freeze 30 minutes or until firm.

Place softened vanilla ice cream and remaining 2 tablespoons of malted milk powder in a bowl. Beat with a mixer at hight speed until smooth and creamy. Spread mixture evenly over first 2 layers.

Cover and freeze 4 hours or until firm. Top with hot fudge and whipped cream just before serving.

Yield: 8 servings

Easy Banana Muffins

You can almost always find banana muffins in my freezer. I love peanut butter and banana sandwiches but sometimes I don’t get around to using all the bananas. I hate to waste them so I usually end up making muffins with the overly ripe bananas.

My favorite recipe is adapted from a Cooking Light Banana Bread recipe. I like that the recipe is easily cut in half and is perfect to use one banana and make six muffins (of course you can make the full recipe too).

It takes no time at all to get these in the oven. You don’t even have to break out a mixer! Everything can be done by hand. The muffins are soft with a nice crispy crumb when they’re fresh out of the oven. They freeze well and are perfect for an on the go breakfast.

Easy Banana Muffins
(Recipe adapted from Cooking Light)

Ingredients:

1  cup  all-purpose flour
1/2  teaspoon  baking soda
1/4  teaspoon  salt
1/4 cup light brown sugar, packed
1/4 cup granulated sugar
1/8 cup vegetable or canola oil
1 large egg
1 large banana, mashed
2 tablespoons, plus 2 teaspoons of plain low-fat yogurt or low-fat sour cream
1/2 teaspoon vanilla extract
Cooking spray

Directions:

Preheat oven to 350 and spray muffin tin with cooking spray.

Mix together flour, baking soda and salt in a medium bowl. Set aside.

In a separate bowl, mix together sugars, oil, egg, banana, yogurt or sour cream and vanilla.

Pour wet ingredients into dry ingredients and mix until just moist and incorporated. Spoon batter into prepared muffin tins, filling about 2/3 of the way full.

Bake for about 18-22 minutes, until golden brown and a toothpick inserted in the center comes out clean. Cool in pan for a few minutes and then transfer to a wire rack.

Yield: 6 muffins

These fruit skewers are one of my favorite things to serve at showers, parties and lunches. They only take a few minutes to put together, look beautiful on the plate and are easy to pick up. I vary the fruit depending on what is looking good and in season. The dip incorporates cream cheese, vanilla yogurt and powdered sugar and has just the right balance of sweetness and tang.

Try these out next time you need to bring something to a shower or luncheon! They will be a hit!

Fruit Skewers with Vanilla Cream Cheese Dip
(A Bakin’ and Eggs Original)

Ingredients:

1 cantaloupe, diced
1 pint strawberries, cut in half
1 pineapple, diced
Bamboo skewers
1 block reduced fat cream cheese (8 ounces), softened
1/2 cup low-fat vanilla yogurt
3/4-1 cup powdered sugar (adjust amount to taste)
1/2 teaspoon vanilla extract

Directions:

Place six pieces of fruit on each skewer, alternating fruits. Arrange on a platter.

Combine cream cheese, vanilla yogurt, powdered sugar and vanilla in a large bowl. Mix on high speed with a hand mixer until combined and fluffy. Sample the dip and adjust ingredients to taste.

I have really lucked out with access to fresh local fruits and vegetables lately. First, there were the figs. Remember the Grilled Fig and Prosciutto Pizza and the Fig Upside Down Cake? Then we had the mountain blueberry extravaganza that resulted in this Peach and Blueberry Crisp. Last week I found out that my brother in law’s tomato plants were going crazy. This summer he planted his first garden and I was really excited to hear that his tomatoes were doing really well and really excited that he wanted to share some with me!

When I saw the beautiful red and yellow cherry tomatoes I was instantly inspired to serve them over fish. I Googled “fish and cherry tomatoes” and this recipe from epicurious.com was the first to pop up. Usually, I spend forever looking for the perfect recipe but this was just what I had in mind so I went with it.

I found red snapper on sale at the store and it ended up working great with this dish. It was firm and didn’t fall apart when sauteed and good for my husband who doesn’t like strong fish. The cherry tomato/olive mixture is very flavorful and the red pepper flakes add just the right amount of spice to the dish.

This was a great summer dinner and we’ll definitely have this again!

Sauteed Snapper with Cherry Tomatoes

Ingredients:

2 tablespoons extra virgin olive oil
3/4 to 1 pound tilapia, red snapper, orange roughy fillets
1/4 cup chopped fresh parsley
1/4-1/2 teaspoon dried crushed red pepper (depending on your spice tolerance)
2 cups cherry tomatoes, halved
1/2 cup Kalamata olives, chopped
3 garlic cloves, minced
Salt and pepper

Directions:

Sprinkle fish with salt and pepper. Preheat a large skillet over medium-high heat. Add olive oil and heat until shimmers. Place fish in skillet and cook for about 3-4 minutes per side, depending on the thickness of your fish. Fish should be opaque and flake easily. Transfer to plate.

Add parsley, crushed red pepper, tomatoes, olives and garlic to same skillet and saute until tomatoes are soft and juicy, about 2-3 minutes. Season with salt and pepper and spoon over fish.

Yield: 2 servings

Blueberry Peach Crisp

Some of you might remember that Brandon and I recently moved to Charlotte, North Carolina from Birmingham, Alabama. One of the things we were looking forward to most about the move to Charlotte was being close to great outdoor activities. Last weekend we decided to head to the Pisgah National Forest to hike and camp.

We were extremely pleased to discover that it’s blueberry season in the mountains and the trail we hiked was FULL of blueberry bushes. You would not believe the amount of blueberries we saw – mountains full! We snacked on blueberries on our hike in and out from our campsite and picked two gallon bags full to take home. It was totally worth the extra weight in our packs!

So despite being tired from the weekend on Sunday night, I was eager to bake something with my blueberries. I had been planning on making a peach cobbler and had some peaches in the fridge. I was looking for blueberry peach cobbler recipes online when Brandon mentioned he preferred cobbler with “crunchy topping.” I informed him he had a crisp in mind and began looking for crisp recipes. I saw this recipe on Use Real Butter and knew I would look no further.

It was awesome. The flavor of the blueberries really shined and the pecans added just the right nutty taste. You don’t toast them before adding them to the crisp topping but they get a great toasted flavor as they bake. With a scoop of ice cream, this is a heavenly dessert!

Blueberry Peach Crisp
(Recipe source Use Real Butter, originally from Fine Cooking)

Ingredients:

2 ounces (1/2 stick) unsalted butter, softened – plus more for greasing pan
3 ounces all purpose flour (this is a little shy of 3/4 cup)
1/2 cup light brown sugar, packed
1/2 teaspoons cinnamon
1/4 teaspoon salt, divided
2/3 cup pecans, coarsely chopped
3 cups (about 1 pound) blueberries, rinsed and picked through
3 medium peaches (about 1 pound), peeled and sliced about 1/2 inch thick
1/4 cup sugar
3 tablespoons cornstarch
1/8 teaspoon ground nutmeg

Directions:

Preheat oven to 375 degrees. Butter a 9-inch square pan, or a comparable size baking pan (I used an oval baker).

To make the topping, mix together flour, brown sugar, pecans, cinnamon and 1/8 teaspoon salt. Work butter into the mixture until clumpy.

For the fruit, mix together blueberries, peaches, sugar, cornstarch and nutmeg. Pour into prepared pan and spread evenly.

Sprinkle topping over fruit and bake for about 40 minutes, or until topping is lightly browned. Serve warm with ice cream.

Yield: 6 servings

I was flipping through the July/August 2009 issue of Cooking with Paula Deen when I saw these Broiled Blue Cheese and Bacon Tomatoes.  After I wiped the drool off the page, I promptly went to the grocery to get the ingredients for this recipe.  I knew Brandon would be all about these too given his love for tomatoes, blue cheese and bacon.

This is a perfect side dish to use those delicious tomatoes that are in season right now. These tomatoes totally lived up to my lofty expectations. I really like that you don’t scoop out the tomato goodness but simply top the tomatoes with the blue cheese and bacon mixture. It was just the right ratio of topping to tomato, still letting the flavor of the fresh tomatoes be the star.

Broiled Blue Cheese and Bacon Tomatoes

Ingredients:

1 sleeve round butter crackers, crushed (we used Ritz)
5 ounces blue cheese, crumbled
6 slices of bacon, cooked and crumbled
1/4 cup green onions, chopped
1/4 cup butter, melted
3 large tomatoes, cut in half crosswise
1/4 teaspoon salt
1/4 teaspoon ground pepper

Directions:

Preheat oven to 500 degrees. Line a rimmed baking sheet with foil.

Combine cracker crumbs, blue cheese, bacon and green onion in a bowl. Add melted butter and stir to mix well. Place tomatoes cut side up on the baking sheet and sprinkle with salt and pepper. Divide blue cheese and bacon mixture evenly among tomato halves.

Broil, 5 inches away from heat for about 5-8 minutes, or until topping is lightly browned.

Yield: 6 servings

Black Beans and Rice

Part two of last night’s delicious grilled shrimp taco dinner. This is pretty much my go-to black beans and rice recipe. I’m almost always guaranteed to have all the ingredients in my pantry and it’s simple, good and always a great side dish for Mexican night. And be warned…this recipe makes a ton!

Black Beans and Rice
(Recipe source Joy of Cooking)

Ingredients:

1 large onion, diced
1 fresh pepper, seeded and diced (like jalapeno or habanero, or substitute diced canned jalapenos or red pepper flakes – use what you have!)
2 cloves garlic, minced
2 tablespoons olive oil
1 cup chopped fresh tomatoes (or 1 can of diced tomatoes)
1 cup rice
2 1/2 cups water
1 teaspoon salt (or more, to taste)
1 can black beans, drained and rinsed

Directions:

Heat olive oil in a medium saucepan over medium heat. Add onions and peppers and cook for about 3 minutes. Add garlic and cook for another 2-3 minutes, or until mixture is softened.

Stir in tomatoes, water, rice and salt. Bring mixture to a boil and then stir in black beans. Cover and cook over low heat for about 20 minutes, until water absorbed and rice is tender. Don’t peak until the 20 minutes are up!

Remove from heat and let stand about 5-10 minutes (still covered) before serving.

Yield: 6-8 side dish servings
