68 Days of Gourmet: Day 15

I saw this recipe in The Gourmet Cookbook as I was putting together our menu for the week. I knew this would be a huge hit with Brandon and I haven’t made meatballs in forever. This dinner was surprisingly quick and easy to put together given that you make your own tomato sauce. I put the sauce on to simmer, assembled the meatballs and stashed them in the fridge while I was doing some things around the house. I put pasta on to boil and cooked the meatballs once we were ready to eat.

Overall, I would have to say that the meatballs were a definite success but I would use a different sauce recipe next time. I loved the combination of veal, pork and beef in the meatballs and they held together beautifully. No falling apart while cooking – this could have been helped too by the time they spent in the fridge prior to being cooked. I found the sauce to be a little too thin. At first I attributed this to my laziness, the recipe calls for pulsing whole tomatoes a food processor. I just stuck some kitchen shears in my whole tomatoes and cut them up so they were more diced than pureed. Then I read the reviews on the online recipe and saw that others had issues with the thin sauce too. I think this could be helped by adding a little tomato paste and maybe using crushed tomatoes instead of whole. Or just use your favorite marinara recipe (see my favorite recipe here) and skip this one all together. Also, if you’re big on sauce and serving this over pasta you may want to double the sauce.

The meatballs are a definite winner though. I recommend using this meatball recipe next time you make spaghetti and meatballs. I’m so excited to use the leftovers for meatball subs tonight! (They were so good I couldn’t resist snapping a photo to share. Yum!)

Meatballs in Tomato Sauce
(Recipe adapted from Gourmet, January 2002 and The Gourmet Cookbook)

Ingredients:

3 tablespoons olive oil, divided
1 (28- to 32-ounce) can whole tomatoes or crushed tomatoes
2 garlic cloves, minced
1 onion, finely diced, divided
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon Italian seasoning
Shot of red wine (optional)
1 1/2 teaspoons salt, divided
1/2 cup fine fresh bread crumbs
1/2 cup whole milk
1 1/2 lb meatloaf/meatball mix (mixed ground beef, pork, and veal)
5 tablespoons chopped fresh flat-leaf parsley, divided
1/4 teaspoon dried hot red pepper flakes (optional)

Directions:

Heat a medium saucepan over medium heat. Add 1 tablespoon olive oil and add garlic and about 1/4 of your diced onion.  Cook for about 5 minutes, until onion softens and becomes transparent. In the meantime, if using whole tomatoes, pulse tomatoes with juices in food processor until chopped. Add tomatoes, oregano, Italian seasoning, splash of wine and 1/2 teaspoon of salt to pot. Simmer uncovered, stirring occasionally, until thickened, about 20 minutes (can simmer longer if necessary).

While sauce is simmering, stir together bread crumbs and milk in a large bowl and let stand 5 minutes until bread crumbs have absorbed milk. Add meat, rest of onion, 3 tablespoons parsley, red pepper flakes and remaining teaspoon salt. Blend with your hands until just combined (do not over mix). Form 2-tablespoon amounts into meatballs. You should have about 20.

Heat remaining 2 tablespoons of oil in a 12-inch heavy skillet over medium high heat until hot but not smoking. Carefully add meatballs and sauté in 2 batches, turning occasionally, until well browned, about 5 minutes. Transfer to tomato sauce using a slotted spoon.

Simmer meatballs, covered, stirring occasionally, until cooked through, about 5 more minutes. Serve over pasta and sprinkle with remaining  2 tablespoons parsley.

Yield: 4 servings

68 Days of Gourmet: Day 14

Saturday was my one year blogiversary! On November 28, 2008 I made my blogging debut with my Dad’s chili recipe. To celebrate reaching the one year mark I decided to make the Flourless Chocolate Cake from The Gourmet Cookbook. I thought it would be a nice departure from Thanksgiving desserts and I can’t get over how easy it is to make this cake. It’s a perfect option for an impressive dinner party dessert when you don’t want to spend all day in the kitchen.

I am not the biggest chocolate dessert fan (I know, I’m crazy) but Brandon gave this cake two thumbs up and I consider him a chocolate dessert aficionado. He is known for always ordering the most chocolaty and rich dessert on the menu at restaurants! The texture is almost brownie-like (fudgy) but the taste is similar to a very dark chocolate cake. Brandon requested his with a scoop of ice cream but it’s also nice served with fresh whipped cream, a dusting of powdered sugar or cocoa powder and fresh berries.

Flourless Chocolate Cake
(Recipe source The Gourmet Cookbook)

Ingredients:

8 ounces good quality bittersweet (not semi-sweet) chocolate, roughly chopped
2 sticks unsalted butter, cut into pieces
1 1/2 cups sugar
6 eggs
1 cup unsweetened cocoa powder

Directions:

Preheat oven to 350 degrees. Generously grease a 9 or 10 inch springform pan and line the bottom with wax or parchment paper (cut into a circle to fit bottom of pan). Make sure to grease the liner as well.

In a double broiler or in a large bowl over a pan of simmering water, add chocolate and butter. Stir constantly until melted. Remove bowl from heat and whisk in sugar. Add eggs, one at a time, mixing well after each addition. Last, sift cocoa powder into mixture and whisk until just combined.

Pour batter into prepared springform pan and bake for 35-40 minutes. A toothpick inserted in the center should come out with moist crumbs and top should have a thin crust. Cool cake in pan on a rack for 10 minutes and then remove sides of pan. Invert cake on a plate and then back onto the rack to fully cool before serving.

Yield: 10-12 servings

Giving Thanks

I’m taking a day off of 68 Days of Gourmet to celebrate the holiday with my family. While I won’t be blogging about a Gourmet recipe today I will be cooking some. I’m making Creamed Leeks and Brussel Sprout Hash with Caramelized Shallots as side dishes for our meal. I will be blogging about these soon! I also have a special post coming up on Saturday to celebrate my one year blogiversary!

What are you thankful for today? Here are just a few things I am thankful for this year…

Having the opportunity to spend Thanksgiving with my family for the first time in three years.

Our amazing friends – even though we are all living in different places now our friendship will always be strong!

Sullie – the sweetest golden retriever in the world and my running partner!

The arrival of our healthy and beautiful niece, Scarlett, who will be two weeks old tomorrow!

And of course my sweet husband who grills me delicious food on our Big Green Egg and who waits patiently for me to take pictures of our dinner while it gets cold! 🙂

And last, I am thankful for the readers of this blog. I never thought when I started it a year ago that it would grow to where it is today. Thank you for reading, commenting and trying the recipes!

68 Days of Gourmet: Day 13

Does it get more comforting than chicken and mushrooms in a cream sauce with noodles? I think not. Stocked with a bunch of leftover mushrooms from the Filet Mignon with Mushroom Sauce and a lot of heavy cream from the best ever Macaroni and Cheese, I decided to try out the Chicken Fricassee recipe in The Gourmet Cookbook. We really love creamy chicken dishes but most of them include cream of yuckiness soup. Although this recipe is not exactly low-cal, it is a delicious and creamy combination of chicken and mushrooms with no fake or processed ingredients.

This dish is nothing fancy, it’s just good old-fashioned comfort food. The chicken was extremely tender after being braised in the chicken broth and vegetable mixture and the finished dish was perfect served over egg noodles. This was a great weeknight meal served with steamed broccoli and rolls alongside.

And on another note…I promise the week after Thanksgiving I will attempt to focus more on recipes that qualify for the “Healthy” category!

Chicken Fricassee
(Recipe source The Gourmet Cookbook)

Ingredients:

1 (3 1/2 pound chicken, rinsed, patted dry and cut into 8 pieces) – I used 3 bone-in, skin-on chicken breasts
Salt and pepper, to taste
2 tablespoons vegetable or olive oil
1 medium onion, diced
1 celery stalk, finely diced
1 clove garlic, minced
1/2 teaspoon dried or fresh thyme
10 ounces (3 cups) mushrooms, sliced
2 tablespoons all-purpose flour
1 3/4 cup chicken broth
1/2 cup heavy cream
1 egg yolk
Garnish: flat leaf Italian parsley

Directions:

Generously coat chicken with salt and pepper. Heat a large, heavy skillet over medium-high heat. Add oil and heat until shimmering. Carefully place chicken in pan, skin side down and cook for about 3 minutes per side, until browned. Remove chicken from pan and reduce heat to medium. Add onion, celery, mushroom and garlic and cook for 7-10 minutes, or until mushrooms and onions have softened. Stir in thyme and flour and cook for another minute or so. Add in chicken broth and bring to a boil. Add chicken, skin side up, and simmer, covered, until chicken is just cooked through. This should take 20-25 minutes and internal temperature should be 160 degrees for breasts and 170 for legs or thighs. Transfer chicken to a plate while you make sauce.

To make the sauce, whisk together cream and egg yolk in a small bowl. Add in 1/2 cup mushroom/broth mixture in a slow stream, whisking constantly. Whisk cream mixture into sauce in pan and gently simmer over low heat (careful not to let it come to a boil) whisking frequently. Sauce should slightly thicken and cook for about 1 minute.

Place chicken over egg noodles and spoon sauce over. Sprinkle with parsley.

Yield: 3-4 servings

I came across this recipe while flipping through the Breakfast/Brunch section of The Gourmet Cookbook. I thought it would be perfect to have on hand during the holidays, as a breakfast treat or an afternoon snack. Brandon and I decided that this bread is definitely less coffee cake and more pound cake. The flavor of the cake itself was extremely reminiscent of pound cake. The fresh cranberry ripple added a nice touch of fruit flavor. This would be perfect to have around the house for guests to snack on or as part of a holiday breakfast or brunch. I sliced and wrapped the bread in individual slices and put them in the freezer for a quick (and indulgent) snack on the go.

Fresh Cranberry Coffee Cake

Ingredients:

2 cups fresh or thawed frozen cranberries
1 3/4 cup sugar, divided
2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1 stick unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup whole milk
Optional: confectioners’ sugar for garnish

Directions:

Preheat oven to 350 degrees. Generously butter a 9 x 5 loaf pan.

Place cranberries and 1/2 cup of sugar in food processor and pulse until cranberries are finely chopped and sugar is incorporated, careful not to puree. Place in a sieve and let drain while you prepare the cake batter.

In a medium bowl, sift together flour, baking powder and salt. Set aside. In the bowl of a stand mixer or in a large bowl with a hand held mixer, cream together butter and remaining 1 1/3 cup sugar for about 3 minutes on high speed until light and fluffy. Reduce mixer speed to medium and add in eggs one at a time, mixing well after each addition. Add in vanilla. Reduce speed to low and alternately add flour mixture and milk in three parts, beginning and ending with flour.

Spread 1/3 of the batter in bottom of prepared loaf pan. Spoon 1/2 of the cranberries over the batter, leaving a 1/2 inch border around the edges (see picture below). Top with another 1/3 of batter and remaining cranberries and finally, top with last 1/3 of batter.

Bake for 50-60 minutes, until a toothpick inserted in center comes out clean.

Yield: 8 servings

68 Days of Gourmet: Day 11

One of my favorite things to do is stay in on Friday night and cook a nice dinner. I’m usually pretty tired from a week of working and enjoy hanging out at home, cooking and watching a movie. We save going out for Saturday nights. Brandon commonly requests steak for our Friday night dinners. He used to love filets but since getting into grilling his favorite now is bone-in ribeyes.

Filets were on sale at the grocery Friday so I decided have Brandon grill them and I’d make a nice sauce. We love sautéed mushrooms with grilled steaks so I decided this recipe for Filet Mgnon with Mushroom Sauce from Gourmet sounded perfect.

The combination of the bacon and mushrooms in this sauce was great. The bacon really added an extra element of depth to the sauce and the lemon brightened it up. It was very simple to put together and holds well if your steak isn’t ready yet. The sauce was a nice addition to the grilled filet. I served our steaks with steamed asparagus and roasted fingerling potatoes. A perfect dinner for two!

Filet Mignons with Mushroom Sauce
(Recipe source Gourmet, March 1995)

Ingredients:

1 slice bacon
1 small garlic clove, mashed to a paste
1 1/2 tablespoons unsalted butter
6 white mushrooms, sliced thin
2 tablespoons Cognac or other brandy
2 tablespoons water
2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1 tablespoon fresh parsley, minced
Salt and pepper, to taste
2 filet mignons, about 1 inch thick

Directions:

Cook bacon over medium heat in a heavy 8-inch skillet (cast iron if available) until crisp. Transfer to a paper towel and pour off excess fat from the skillet. Crumble bacon and reserve.

Add 1 tablespoon of butter and garlic to skillet. Cook until butter is softened and then add mushrooms and salt and pepper, to taste. Cook for about 10 minutes, stirring frequently, until liquid from mushrooms begins to evaporate. Add brandy and boil until nearly evaporated. Stir in water, lemon juice and Worcestershire sauce and boil until sauce is thickened slightly. Transfer sauce to a small saucepan and stir in reserved bacon and parsley. Keep sauce warm.

Pat filets dry with paper towels and generously salt and pepper. If you’re cooking steaks in skillet, heat remaining 1/2 tablespoon butter over medium high heat and sauté filets for 4 minutes. Sear sides slightly and turn filets over. Sauté 3 to 3 1/2 minutes more for medium-rare meat. Internal temperature should be 125 degrees. Let steak rest for about 5 minutes before serving.

For the grill, preheat the grill to 400 degrees. Cook steaks for about 4-5 minutes per side, rotating half way through on each side if you want grill marks (a 45 degree turn). Pull steaks when they’ve reached 125 degrees for medium rare. Let rest 5 minutes to allow juices to redistribute.

Divide filets between 2 plates and spoon sauce over them.

Yield: 2 servings

68 Days of Gourmet: Day 10

I just finished sampling a slice of this cheesecake. I love cheesecake and I love pumpkin and this combination didn’t disappoint. Brandon’s first comment was, “I can’t believe how much it tastes like pumpkin pie.” I think what I like best about it is that it’s not too sweet. The balance of flavors is perfect and the texture is nice.

This cheesecake was published in Gourmet in November 2000. It’s received over 300 reviews and maintains a 4-fork rating. It’s definitely a winner if you’re looking for a holiday dessert. This cheesecake is a nice change from the traditional pumpkin pie. But don’t save it only for Thanksgiving, it’s a great dessert to serve throughout the fall and holiday season.

I substituted ginger snaps for the graham crackers in the crust because I love holiday cheesecakes with ginger snap crust. Also, you can omit the bourbon if you’d like but the bourbon flavor is not very strong.

If you’re a cheesecake and pumpkin lover this dessert is for you!

Pumpkin Cheesecake with Bourbon Sour Cream Topping
(Recipe source Gourmet, November 1990)

Ingredients:

FOR THE CRUST
3/4 cup graham cracker or ginger snap crumbs
1/2 cup finely chopped pecans
1/4 cup firmly packed light brown sugar
1/4 cup granulated sugar
4 tablespoons (1/2 stick) unsalted butter, melted and cooled

FOR THE FILLING
1 1/2 cups solid pack pumpkin
3 large eggs
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 cup firmly packed light brown sugar
3 (8-ounce) packages cream cheese, softened
1/2 cup granulated sugar
2 tablespoons heavy cream
1 tablespoon cornstarch
1 teaspoon vanilla
1 tablespoon bourbon (optional)

FOR THE TOPPING
2 cups sour cream
2 tablespoons granulated sugar
1 tablespoon bourbon (optional)

Directions:

FOR THE CRUST
Butter a 9-inch springform pan. Combine the crumbs, pecans and sugars in a bowl. Stir in melted butter and press mixture into the bottom and 1/2 inch up the sides of springform pan. Chill crust for 1 hour.

FOR THE FILLING
Preheat oven to 350 degrees.

Whisk together pumpkin, eggs, cinnamon, nutmeg, ginger, salt and brown sugar in a large bowl. In the bowl of a stand mixer, cream together cream cheese and granulated sugar for about 3 minutes. Add in cream, cornstarch, vanilla and bourbon and mix until incorporated. Add in pumpkin mixture and beat until smooth.

Pour filling into chilled crust and bake the cheesecake for 50 to 55 minutes, until the center is just set. Remove from oven and let cool in pan for 5 minutes (leaving the oven on).

MAKE THE TOPPING
Whisk together sour cream, sugar and bourbon in a bowl.

Spread sour cream mixture evenly over top of the cheesecake. Bake for 5 more minutes. Remove from oven and let cool in the pan on a rack for at least an hour. Place in refrigerator and chill covered overnight.

Release cheesecake from pan and serve.

Yield: 8-10 servings

68 Days of Gourmet: Day 9

I don’t even know where to start. I don’t want to gush so much that you think I’m crazy but this macaroni and cheese recipe is pretty life changing as far as mac and cheese recipes go. If you think you’ve already found the perfect recipe you still have to try this one. I found it in The Gourmet Cookbook. They had me at, “this is arguably the best macaroni and cheese on the planet.”

Macaroni and cheese is one of my favorite comfort food dinners. I just serve it with a green salad and call it a meal. (Who needs meat anyway when you can just eat more mac and cheese!?) The method in this recipe is pretty basic for mac and cheese: make a roux, stir in milk, cream and cheese, mix in macaroni, sprinkle on topping and bake. The results are a creamy, cheesy mac and cheese with a crunchy topping – heaven!

I’m already planning the next time that I’ll make this…and that will be this weekend. My sister-in-law just brought home a new baby and I know they will love this mac and cheese. This recipe makes a full 11 x 17 pan so it’s perfect for leftovers or entertaining.

Please try this and let me know how it compares to other mac and cheese recipes! This has definitely been one of the highlight recipes of 68 Days of Gourmet so far and I know I’ll be making this for years to come.

Macaroni and Cheese
(Recipe source The Gourmet Cookbook)

Ingredients:

FOR TOPPING
1/4 stick (2 tablespoons) unsalted butter, melted
2 cups panko or coarse dry breadcrumbs
1 cup grated extra-sharp cheddar cheese

FOR CHEESE SAUCE AND MACARONI
3 tablespoons unsalted butter
3 tablespoons all-purpose flour
1/2 teaspoon red pepper flakes
2 3/4 cup whole milk
3/4 cup heavy cream
4 cups grated extra-sharp cheddar cheese (about 1 pound)
2 teaspoons Dijon mustard
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
3/4 pound elbow macaroni

Directions:

Preheat oven to 400 degrees. Grease a 3-4 quart baking dish or 13 x 9 pan with butter or cooking spray.

FOR THE TOPPING
Mix together panko, butter and cheese in a medium bowl. Set aside.

FOR THE SAUCE
Melt butter in a heavy pot over low heat. Whisk in flour and red pepper flakes and cook, whisking constantly, for about 3 minutes to make a roux. Whisk in milk in a slow steady stream. Increase heat and bring to a boil, whisking constantly. Simmer for another 3 minutes, stirring frequently until mixture is thickened a bit. Stir in cream, cheese, mustard, salt and pepper until cheese is melted. Remove from heat and set aside.

COOK THE MACARONI AND ASSEMBLE THE DISH
Cook macaroni according to package directions, making sure to add plenty of the salt to the cooking water. (At least 1 tablespoon for every 4 quarts.) Undercook macaroni about 3-4 minutes so that it still has quite a bite to it. This ensures the pasta won’t get mushy when cooking. Reserve 1 cup pasta water and then drain noodles.

Stir together macaroni, reserved cooking water and sauce in a large bowl or in your sauce pot if it’s big enough. Transfer to prepared baking dish, mixture will be loose.

Sprinkle topping evenly over mixture and bake for about 25-35 minutes. Top should be golden and bubbling.

Yield: 8 main course servings or 12-14 side dish servings

Day 8 of 68 Days of Gourmet! Only 60 more posts to go! I made an exciting purchase last night – The Gourmet Cookbook. It includes over 1,000 recipes. I started flipping through it last night and have already flagged well over 60 recipes that I want to try and that was just appetizers, soups and salads! It’s going to be tough to narrow it down but I’m happy to have this resource in my kitchen.

Sashimi grade tuna steaks were on sale at the grocery this week and they looked great. I picked some up on my weekly shopping trip. I found this recipe that included an amazing looking marinade in Gourmet. The marinade reminded me of a recipe I’ve always loved that my parents use for salmon.

It was just as good as I’d hoped. While cooking the tuna, I brought the marinade to a boil so we could spoon extra sauce over our fish and rice. The combination of the teriyaki and soy sauce with the fresh ginger and garlic was so delicious. I will definitely be making this marinade again for tuna and also for salmon. I usually have most of the ingredients in my pantry so it’s a great standby fish preparation.

Asian Marinated Tuna Steaks
(Recipe adapted from Gourmet, September 1996)

Ingredients:

1/2 cup teriyaki sauce
2 tablespoons soy sauce
2 tablespoons firmly packed brown sugar
1 tablespoon Sherry or white wine
1 tablespoon rice vinegar
1 tablespoon vegetable oil
1 teaspoon Asian sesame oil
3 garlic cloves, minced
1-inch piece fresh ginger, peeled and finely diced
2 scallions, chopped fine
a pinch dried hot red pepper flakes, or to taste
2-4 tuna steaks, depending on how many you’re feeding

Directions:

Combine everything except for fish in a baking dish. Whisk to combine. Place fish in marinade and let sit at room temp if you’re marinating for less than an hour, in the fridge if you’re marinating over one hour and bring to room temp when you have about an hour left. The reason for this is so your fish won’t be cold in the center when seared. Marinate fish for up to 2 hours total.

Remove fish from marinade and pat dry. Place marinade in a small saucepan and bring to a boil and let cook for a few minutes. Heat a couple tablespoons of oil in a saute pan over medium high heat. Sear fish about 1 minute per side for rare tuna.

Spoon a bit of boiled marinade over tuna before serving.

Yield: 2-4 servings, depending how many steaks you cook

Two posts in one day? I can honestly say I never thought this would happen but this turkey is just too beautiful not to share with my readers while everyone is planning Thanksgiving menus. I can’t take any credit for this bird – it’s my dad’s practice turkey for Thanksgiving. He made this last weekend on the Big Green Egg using Alton Brown’s Good Eats Roast Turkey recipe. If you’re looking for a turkey recipe I think you should give Alton’s a try. I was shocked to see it has received 2,289 reviews and still has 5-stars. Pretty impressive! My dad was very pleased with how this turkey turned out and will be using this recipe on Thanksgiving day.

One of the benefits of cooking your turkey on the Egg is having your oven space available for all your sides and desserts. Also, the smoke flavor and crisp skin is delicious! If you don’t have an Egg, no worries. Alton’s recipe provides step-by-step instructions for the oven.

The only thing my dad did differently was let the turkey air-dry in the fridge for 12 hours before cooking. This dries the skin to help it become golden and crisp while cooking.

Can’t wait to try this turkey on Thanksgiving day!

Good Eats Roast Turkey on the Big Green Egg

COOK TIME

Ingredients:

1 (14-16  pound) fresh turkey

FOR THE BRINE
1 cup kosher salt
1/2 cup light brown sugar
1 gallon vegetable stock
1 tablespoon black peppercorns
1 1/2 teaspoons allspice berries (my dad substituted 1/2 teaspoon cinnamon)
1 1/2 teaspoons chopped candied ginger
1 gallon heavily iced water

FOR THE AROMATICS
1 red apple, sliced
1/2 onion, sliced
1 cinnamon stick
1 cup water
4 rosemary sprigs
6 sage leaves
Canola oil

Directions:

TO MAKE THE BRINE
Combine the vegetable stock, salt, brown sugar, peppercorns, allspice berries and candied ginger in a large stockpot over medium-high heat. Stir occasionally to dissolve solids and bring to a boil. Remove the brine from heat, cool to room temperature and refrigerate.

TO BRINE THE TURKEY
The day before you’re roasting your turkey, combine the brine, water and ice in the 5-gallon bucket. Place the turkey (with innards removed) breast side down in brine. If necessary, weigh down the bird to ensure it is fully immersed. Cover and refrigerate or set in cool area for one hour per pound. Turn the bird once halfway through brining if your turkey is not fully submersed.

After brining time is up, remove the bird from the brine, rinse and pat dry. Place in refrigerator and allow to air chill overnight, about 12 hours.

TO ROAST THE TURKEY
If using the Egg, set it up with a plate setter or pizza stone. Place a cast iron grate (feet side up) on top of that and finally you’ll place the turkey in a roasting pan on top of that (after Egg is preheated). Preheat the oven or Big Green Egg to 500 degrees.

Combine the apple, onion, cinnamon stick and 1 cup of water in a microwave safe dish and microwave on high for 5 minutes. Add steeped aromatics to the turkey’s cavity along with the rosemary and sage. Tuck the wings underneath the bird and coat the skin liberally with canola oil.

Roast the turkey in the Big Green Egg with lid down or on lowest level of the oven for 30 minutes. Insert a probe thermometer into thickest part of the breast and reduce the oven temperature to 350 degrees (or bring the grill temperature down). Set the thermometer alarm (if available) to 161 degrees and remove the turkey to rest when it reaches this temperature. (After 2 hours my dad’s turkey was 163 degrees in the breast and 171 degrees in the thigh).

Let the turkey rest, loosely covered with foil for at least 15 minutes before carving.
